3 Step Cornbread Stuffing

Ingredients

 1 batch POD & BEAN® Gluten Free White Chocolate Cornbread, prepared and cut into large cubes
 1 stick butter
 1 medium onion, diced
 1 cup celery, diced
 2 tbsp fresh sage, chopped
 1 tbsp fresh thyme, chopped
 2 ½ cups chicken or turkey stock
 ¼ cup parsley, chopped
 Salt and pepper, to taste

Directions

Preheat oven to 350° F. In a large pan over medium heat, combine butter, onion, celery, sage and thyme. Cook for 15-18 minutes, or until the onions and celery are softened.

In a large bowl, combine the cornbread cubes, onion mixture and parsley. Slowly add the broth while gently folding the mixture.

Transfer the mixture into a 9" x 13" baking dish and bake for 20-25 minutes or until the top is lightly browned

Leave your cornbread cubes out overnight to dry them out so they will absorb the flavors more readily and retain their shape during mixing.

Want to spice it up? Try adding in a couple teaspoons of POD & BEAN® Sweet & Spicy Cocoa Rub.
