Blackberry Lemon Meringue Pie

Ingredients

 1 pre-baked, 9" pie crust
 3 lemons, juiced and zested
 1 cup sugar
 ¼ cup cornstarch
 1 ½ cups water
 2 tbsp butter
 5 egg yolks, beaten
 5 egg whites
 ½ cup sugar
 ¼ cup POD & BEAN® Blackberry Chipotle Sauce

Directions

In a saucepan over medium-high heat, whisk together the lemon juice, sugar, cornstarch and water. Stir continually until the mixture has come to a boil and is thickened. Reduce heat to low and add the butter.

In a separate bowl, slowly add ½ cup of the hot lemon mixture into the egg yolks. Add the warmed eggs yolks into the pot and simmer for an additional 2-3 minutes while stirring. Remove from heat and pour filling into prepared pie crust.

To prepare the meringue, beat egg whites using an electric mixer with the whip attachment until frothy. Gradually add the ½ cup of sugar while continuing to beat the egg whites until stiff peaks form. Be careful not to over whip.

Spread the meringue over the top of the pie. Gently swirl in the POD & BEAN® Blackberry Chipotle Sauce on top of the meringue.

To brown the meringue, bake in a 350° F oven for 10-12 minutes or use a handheld kitchen torch.
