Blackberry Meyer Lemon Mimosa

Ingredients

 ¼ cup sugar, granulated
 ¾ cup water
 1 Meyer Lemon, sliced
 3 tbsp POD & BEAN® Blackberry Chipotle Sauce
 1 bottle Prosecco or Champagne
 fresh blackberries
 lemon peel curls, for garnish
 rosemary, for garnish

Directions

In a small saucepan, bring sugar, Meyer Lemon slices, and water to a boil.

Add POD & BEAN® Blackberry Chipotle Sauce and reduce heat to low.

Allow to simmer for approximately 10 minutes and remove from heat.

Strain syrup into a small bowl, partially cover and allow to completely chill before using.

When ready to serve, add 4 oz. Prosecco and then pour 2 oz. Blackberry Meyer Lemon Syrup into glass, add 2 fresh blackberries, garnish with lemon curl, and serve.

LOVE this mimosa! Total Total yum! I couldn’t find meyer lemons, so I left them out and it was still amazing.

I made these for the first time last week. You have to like champagne to like these. They were good not overly sweet! Could adjust amount of syrup you put in to make sweeter.
