Cocoa Nib Energy Bars

Ingredients

 3 cups crisp rice cereal
 2 cups quick/instant rolled oats
 1 cup roasted, unsalted nuts (peanut or almond slivers are recommended)
 ½ cup PURE DARK™ Cocoa Roasted Pepitas
 ¼ cup PURE DARK™ Caramelized Cocoa Nibs
 ½ cup golden raisins
 ½ cup dried cranberries
 ½ cup nut butter (peanut butter is recommended)
 ¼ cup butter, unsalted
 10 oz all natural marshmallow (can substitute standard puff if needed)

Directions

Line a 9” x 13” baking dish with plastic wrap; set aside.

Mix the first 7 ingredients together on a large sheet tray. Place tray in oven and start preheating to 250° F.

While cereal/oat mixture warms up, melt nut butter, butter, and marshmallow in a large pot over medium heat.

Continue to stir marshmallow mixture until well combined.

Add warmed ingredients from tray into large pot and mix quick/thoroughly.

Transfer mixture into baking dish and lightly press to flatten with the back of a measuring cup.

Let it cool for 15 minutes, then flip over on a cutting board to release and remove plastic wrap.

Cut into bars into 1”x2” pieces; wrap individually in wax paper and twist the ends to make the snacks easily portable.
