Creamy Chicken Marsala Skillet

Ingredients

 1 lb chicken tenders
 4 tbsp olive oil, divided
 1 onion. chopped
 1 clove garlic, chopped
 1 cup mushrooms, chopped
 3 cups water
 1 lb penne pasta
 ½ lb asparagus
 1 cup fresh uncooked peas
 8 tbsp POD & BEAN® Mushroom Marsala Sauce
 ½ cup heavy cream or milk
 1 lemon, juiced
 1 tsp lemon zest
 salt and pepper to taste

Directions

Brown 1 pound of chicken tenders in sauté pan with 2 tbsp olive oil. Once cooked, remove from pan and set aside.

Add another 2 tbsp oil to pan and sauté onion, chopped garlic and chopped mushrooms until soft and caramelized.

Add 3 cups of water and penne pasta to the pan. Bring to a boil and cook for 5 minutes. Add asparagus and uncooked peas, and then cook for another 5 minutes; pasta should be cooked through.

Add POD & BEAN® Mushroom Marsala Sauce, heavy cream (or milk) and the juice of one lemon to pan. Cook until sauce is thick and coats pasta, about 2-3 more minutes.

Add lemon zest and salt and pepper to taste. Stir back in cooked chicken and serve.
