Mustard Glazed Ham

Ingredients

 1 onion, diced
 8 cloves garlic, peeled and smashed
 ¼ cup apple cider vinegar
 1 cup orange juice
 8 cloves
 3 sprigs fresh thyme
 2 sprigs fresh rosemary
 10 lbs picnic ham, cured
 2 tbsp Worcestershire sauce
 ¼ cup POD & BEAN® Stone Ground Mustard
 ¼ cup POD & BEAN® White Chocolate Raspberry Honey Mustard
 1 cup brown sugar

Directions

Preheat oven to 400° F.

Add the chopped onion, garlic cloves, apple cider vinegar, orange juice, cloves, thyme, and rosemary to a medium roasting pan and stir to combine.

Place the ham on the roasting rack.

Trim off thick outer skin and make cuts in the fat in a crosshatch pattern.

Cover the entire pan with aluminum foil and bake for 60-75 minutes.

Remove the ham from the oven and baste with the liquid. Remove ham and rack and place on a sheet tray.

Strain the liquid from the roasting pan into a medium sauce pan. Add the POD & BEAN® Stone Ground Mustard, POD & BEAN® White Chocolate Raspberry Honey Mustard, Worcestershire sauce and brown sugar and whisk to combine.

Bring the mixture to a boil over medium heat and then simmer for about 10-15 minutes or until thick and syrupy.

Brush the glaze on the ham and then return to roasting rack.

Place the ham back in the oven and bake for 30-45 minutes, or until the glaze is caramelized and the ham reaches an internal temperature of 145° F.
