Honey Sesame Chicken Stir Fry

Ingredients

 1 lb chicken breast, cut into 1" pieces
 ½ tsp salt
 ½ tsp black pepper
 1 large egg, beaten
 1 cup cornstarch
 3 tbsp vegetable oil
 1 lb green beans, trimmed
 1 cup petite carrots, sliced in half lengthwise
 1 cup POD & BEAN® Honey Sesame Sauce
 4 pouches, Uncle Ben's® READY RICE
 1 tbsp toasted sesame seeds, for garnish

Directions

In a large mixing bowl, add chicken pieces, salt, pepper and beaten egg. Mix thoroughly.

Add cornstarch to a gallon sized disposable bag and use a slotted spoon to transfer chicken pieces into bag. The goal is to drain excess egg wash off of chicken.

Shake bag well to fully coat chicken. Heat a large skillet on medium-high with 2 tbsp. oil.

Add chicken pieces to oil and sauté, while turning occasionally to ensure proper browning on each side. Cook until pieces are crispy and internal temperature has reached 160° F. Remove chicken from pan and place on plate lined with paper towels.

Add carrots and green beans to skillet and sauté for 4-5 minutes, or until cooked through but still slightly crisp.

Return chicken to pan and add POD & BEAN® Honey Sesame Sauce. Stir to coat and cook for 2 minutes.

Serve over hot rice and garnish with toasted sesame seeds.
