InstaPot Broccoli Cheddar Soup

Ingredients

 3 tbsp olive oil
 1 large onion, roughly chopped
 2 cups potato, roughly chopped (reccommend Yukon gold)
 3 cloves garlic
 3 cups vegetable stock
 1 ½ lbs broccoli florets (about 8 cups)
 1 tbsp POD & BEAN™ Stone Ground Mustard
 1 tbsp POD & BEAN™ White Chocolate Raspberry Honey Mustard
 1 tbsp POD & BEAN™ Green Chili Hot Sauce
 3 cups cheddar cheese, shredded
 1 cup half and half
 2 tsp salt
 ¼ tsp black pepper, ground

Directions

Turn on sauté function of the pot and add oil; when hot add in onions and potatoes; sauté for 4 minutes until onions are just beginning to soften.

Add in garlic, stock, and broccoli; stir until combined.

Put lid on and set to manual, high pressure, 10 minutes.

Once done, do a quick release and unplugged unit.

While still hot, stir in mustards, hot sauce, cheese, half & half, salt, and pepper.

Using a ladle, puree the soup using a blender in batches until the desired texture (chunky or smooth).

Taste and season with more salt/pepper if needed.
