Korean BBQ Lettuce Wraps

Ingredients

 1 ½ lbs well marbled and tender steak (recommend ribeye)
 ¼ cup POD & BEAN® Korean BBQ Sauce
 16 large lettuce leaves (recommend red leaf, green leaf, or bibb/butter lettuce)
 3 stalks of green onion (white portion cut into thin rounds/green portion cut into thin, diagonal pieces)
 1 large carrot, julienned
 4 radishes, thinly sliced
 ¼ head red cabbage, thinly sliced
 1 Persian or English cucumber, thinly sliced into rounds
 1 bag UNCLE BEN'S® Basmati or Original Ready Rice
 POD & BEAN® Korean BBQ Sauce (to taste)
 ½ cup Gochujang (a sweet/spicy fermented Korean red chili paste)
 1 cup Kimchi (Korean spicy fermented vegetables)

Directions

Place steak in a freezer bag and place in freezer for 30 min (partially freezing makes cutting easier) and the slice into thin 1/8 inch strips. Season with salt/pepper to taste.

Mix strips and POD & BEAN® Korean BBQ Sauce in a bowl; let it marinate as you get the rest of the meal prepared.

Wash and dry all produce.

Fan the lettuce leaves out on a large serving tray.

Cut white portion of green onion into thin rounds and green portion cut into thin, diagonal pieces. Place into separate piles on the serving tray with lettuce.

Peel carrot, cut into julienne strips (size of a matchstick); place into a pile on the serving tray.

Cut radish into thin slices; place into a pile on the serving tray.

Cut red cabbage into thin strips (match the size of the carrots) and place on serving tray

Cut cucumber into very thin rounds (when picked up, the rounds should not be able to stand up) and place on serving tray.

Preheat skillet/wok on stove top to medium high; when hot add 1 tablespoon cooking oil then marinated meat; cook until meat just browned but still tender (about 3-5 minutes). Remove and place cooked meat into a serving bowl.

Grab a lettuce leaf and build your wrap starting with rice then beef. Continue to top with desired vegetables and add a little Pod & Bean® Korean BBQ Sauce on top to finish.

For a more authentic flavor, spread a little Gochujang on the rice before placing the beef on top; layer with desired vegetables including Kimchi.
