Leftover Breakfast Bake

Ingredients

 6 cups leftover dinner roll or bread, cut into large chunks
 1 ½ cups milk
 6 eggs
 ¼ cup chopped parsley
 2 tsp POD & BEAN® Sweet & Spicy Cocoa Rub
 1 cup leftover yams, sweet potatoes or butternut squash
 1 cup leftover Brussels sprouts
 1 ½ cups shredded mozzarella or cheddar cheese

Directions

Preheat oven to 350° F. Lightly grease a 9" x 13" pan with non-stick cooking spray or butter.

In a medium bowl, whisk together eggs, milk, parsley and POD & BEAN® Sweet & Spicy Cocoa Rub. Set aside.

Place the bread, yams, Brussels sprouts and cheese in the prepared baking dish. Gently mix to combine all ingredients. Pour egg mixture into casserole and press lightly to help the bread absorb the egg.

Bake for 30-35 minutes or until the center is set. Serve immediately.

Putting away all the leftovers- no way! Prep this the night before and bake it in the morning. The bread will have ample time to soak up the eggs in the refrigerator overnight and you’ll have brunch ready in no time at all!
