Mushroom Marsala Tortellini

Ingredients

 ¾ cup POD & BEAN® Mushroom Marsala Sauce
 ¼ cup stock (any kind)
 9 oz tortellini
 2 cups mushrooms (button or portabella), sliced
 2 tbsp olive oil
 4 tbsp Parmesan cheese, grated
 Salt and pepper
 Chopped parsley, for garnish (optional)

Directions

Boil water, add 1 tablespoon olive oil and cook pasta according to package directions.

Heat 1 tablespoon olive oil in skillet on medium-high heat and add mushrooms. Season with salt and pepper and sautée for 1-2 minutes.

Add POD & BEAN® Mushroom Marsala Sauce and stock to pan. Reduce heat to low and cook for 2 minutes.

Drain pasta and add to skillet. Toss to combine and garnish with Parmesan cheese and parsley, if desired.
