Roasted Beets with Feta

Ingredients

 4 medium beets, peeled
 1 tbsp olive oil
 4 scallions, thinly sliced
 ¼ cup POD & BEAN® FIG BALSAMIC VINAIGRETTE
 ½ cup feta cheese, crumbled

Directions

Preheat oven to 450° F.

Peel beets and cut into ½ inch pieces. Toss with 1 tablespoon olive oil and spread on a baking sheet.

Roast until tender (approximately 35 minutes.)

Transfer beets to a bowl and toss with Pod & Bean™ Fig Balsamic Vinaigrette and chopped scallions. Top with crumbled feta and serve.
