Roasted Tomato and Basil Toast

Ingredients

 ½ baguette, sliced into 16 rounds
 ½ cup ricotta cheese
 2 tbsp whipped cream cheese
 2 tsp POD & BEAN™ MOROCCAN MINT SEASONING BLEND
 1 pt cherry tomatoes, red, yellow, or mixed
 ½ tbsp olive oil
 1 tbsp POD & BEAN™ FIG BALSAMIC VINAIGRETTE
 ¼ cup fresh basil, torn

Directions

Preheat oven to 375° F. Place bread slices on a baking sheet and bake until golden brown, about 10-12 minutes. Remove and let cool slightly.

In a small roasting pan, add tomatoes, oil, and 1 Tbsp. POD & BEAN™ FIG BALSAMIC VINAIGRETTE. Mix slightly to coat all tomatoes and arrange in single layer. Add salt and pepper, to taste. Place in oven.

While bread is baking and tomatoes are roasting, add ricotta, cream cheese, and POD & BEAN™ MOROCCAN MINT SEASONING BLEND to a mixing bowl and whisk until smooth and creamy.

Remove tomatoes from oven when they are slightly caramelized and slightly soft to the touch.

To prep crostini, spread each slice with cheese mixture then top with roasted tomatoes. Sprinkle fresh basil on top prior to serving.
