Sheet Pan Kielbasa and Sweet Potato Dinner

Ingredients

 3 large sweet potatoes, washed, peeled and cut into 1/2-inch cubes
 3 large carrots, washed, peeled and cut into 1/2-inch cubes
 3 tbsp olive oil, divided
 1 tsp salt
 ¼ tsp black pepper, ground
 5 fully cooked kielbasa (3-4 inch links)
 1 ½ tsp POD & BEAN™ Green Chili Hot Sauce
 5 cups kale, washed, ribs removed, hand torn in approx. 3-inch squares
 2 tsp POD & BEAN™ Sweet & Spicy Cocoa Rub

Directions

Preheat oven to 425 ˚F, line a sheet tray with disposable foil, and cut another piece of foil to cover sheet tray.

Place the cubed sweet potatoes and carrots on sheet tray. Drizzle 2 tbsp. oil over top and use your hands to coat evenly and season with salt and pepper.

Cut kielbasa into pieces on a bias. Add kielbasa to the sheet pan.

In a large bowl, mix 1 tbsp. oil and POD & BEAN™ Green Chili Hot Sauce and kale, using your hands to lightly coat the leaves. Layer evenly on sheet pan, on top of kielbasa and vegetables.

Cover sheet tray with the extra piece of foil and roast for 12 minutes. After 12 minutes, remove top foil and transfer kale to large serving dish. Place sheet pan back in oven without top foil.

When sweet potatoes and carrots have browned and softened, (another 12-15 minutes; use toothpick to test) remove sheet pan.

While hot, sprinkle POD & BEAN™ Sweet & Spicy Cocoa Rub over roasted veggies. When cool enough to handle, transfer to serving dish with kale and serve.
