Spicy French Macaron with Cocoa Roasted Pepitas

Ingredients

 ¾ cup almond flour
 1 cup powdered sugar
 2 egg whites, room temperature
 ¼ cup sugar
 ¾ cup Heavy Cream
 6 oz PURE DARK™ Aztec Slab, chopped
 ¼ cup PURE DARK™ Cocoa Roasted Pepitas, crushed into small pieces

Directions

Preheat oven to 350 and trace twelve 1.5” diameter circles onto parchment paper leaving at least 1 inch of space between.

In a food processor, combine almond flour and powdered sugar and blitz for 1-2 minutes until very fine.

In a stand mixer, beat egg whites with whisk attachment for 1 minute until a few bubbles form on top; add sugar and continue to beat until just stiff peak.

Dump almond mixture into egg whites and using a spatula, fold mixture until just combined (should be about 34-37 folds).

Transfer into a piping bag with a 3/8-inch round tip. Place the circle template parchment on a sheet tray and place another parchment on top of template.

Pipe circles using the template as a guide (goal is ¼ - ½ height); remove template and repeat on a second sheet tray.

Tap sheet trays to release air bubbles 3 times; dip finger in water and tap down any “peaks” to form an even coin of meringue mixture.

Bake sheet tray one at a time for 13 minutes per tray.

Allow to cool and prepare filling.

Filling

Measure 1 cup of heavy cream in a 4 cup liquid measuring cup and heat in the microwave for 1 minute on high.

Add chopped PURE DARK™ Aztec Cocoa slab into the measuring cup and stir. Microwave 15 seconds at a time until completely melted, stirring in between.

Let filling cool and prepare for assembly.

Assembly

Remove macaron halves from parchment and pair them with a similar sized half.

Crush the PURE DARK™ Cocoa Roasted Pepitas in a sandwich bag until pieces are the size of rice grains.

Add crushed Pepitas into filling. When the filling has cooled down enough to hold a shape, transfer to a piping bag.

Pipe a quarter-sized dollop of filling on the flat side of a macaron and sandwich with another side.
