Thanksgiving Leftover Eggs Benedict

Ingredients

 2 dinner rolls
 4 eggs
 ¾ cup gravy, warmed
 4 slices turkey
 ¼ cup cranberry sauce
 2 tbsp vegetable oil or butter

Directions

Split dinner rolls in half and toast lightly.

In a large skill over medium heat, add the vegetable oil or butter.

Gently divide stuffing into four equal portion and press gently to form a patty. Cook each stuffing patty until warmed through, them place atop the toasted dinner roll.

In the same pan, crack the eggs. Gently cook each egg without turning them for 2-3 minutes, then place 2 tablespoons of water in the pan and cover with a lid for 20 seconds to help set the tops of the egg.

Place each egg atop one of the prepared bases and spoon over warm gravy. Serve with cranberry sauce.
