A corned beef brisket already has a heavy spice load – pepper, coriander and aromatics make up the pickling brine it’s packed in – and a lot of cooks just leave it at that. Our recipe calls for glazing the meat and adding an extra bake to get a delicious juiciness. Pro tip: serve with an extra helping of the glaze on the side in place of traditional mustard.
